THE PROJECT

In 2013, after the Parkway Montessouri School project had wrapped, I began work on Cookie Cart – a 501(c)3 that offers first jobs, education and leadership skills to hundreds of neighborhood teens. And by the way – they make a delicious product.

What could be wrong with spending an entire day field measuring a community bakery while helping the community? I donated more than a few times during my time on this project, and have made donations to the charity. Its a great group of people and what a cool way to keep kids out of trouble while teaching them work skills and leadership as they make their way thru the program. Click the client link for more details. 

My level of involvement was segmented to establishing existing conditions, programming and schematic design before my tenure working with U+B came to a close.

They received a facade grant to improve the storefront of the building, and carried it further by renovating their kitchen area, and offices on the second floor.  

EXISTING SPACES

Step one, as it usually is in renovation projects – is to identify how much space is dedicated to the existing tasks, learn the relationships of the people and process, and revise the spaces to function better. 

In the case of the kitchen, they needed to increase freezer and cooler space, and they wanted a better interaction between the bakery and the sales area – so that the people who came in could see the kids and the process in action. 

 

RECIPE FOR THE BAKERY

In order to accomplish that – we changed the orientation of the offices and repurposed that area for decoration and packaging, while adding dedicated cooler and freezer space and reorganizing the bakery, based on the order of operations.
